The ingredients which are required are 225 grams of plain flour, a pinch of salt, 80 grams of lard and 80 grams of butter.
To begin, mix the flour with the salt, place half of the amount of lard with this. Add cold water until the flour produces a soft dough. Once a soft dough is present, the rest of the lard and also the butter should be added. The dough is now ready to be rolled out, roll the dough into a rectangle. Dot a third of the butter and lard mixture over the rectangle. Seal the edges of the dough with a rolling pin and turn the dough 90 degrees. Place in the fridge and chill for approximately fifteen minutes. Continue adding the fat and chilling several times, ensuring the dough is chilled for fifteen minutes at a time after this. Roll and fold out the dough one final time and chill, the pastry is now ready.
