The Witchery by the Castle was established by James Thomson in 1979 and holds legendary status
in Edinburgh. Located at the top of the historic Royal Mile on Castlehill, the Witchery is a renowned
restaurant and hotel hidden within historic buildings at the gates of Edinburgh castle. It offers
outstanding food and wine in a magnificent setting, popular with celebrities, locals and tourists
from around the world.

As well as the a la carte menu available at the Witchery, the restaurant also offers a 3 course menu
for 30 at lunch and dinner every day. The restaurant is proud to support Scottish farmers and
fishermen, using locally sourced foods including succulent Scottish Angus beef, mouth watering
lamb, traditional game and seafood including Scottish lobster and rock oysters. A classic Witchery
dish is the smoked salmon with leeks and hollandaise and another favourite is Angus beef fillet

With over 1000 wines of offer and the prestigious Wine Spectator Best Award of Excellence in 2004,
it is no wonder the extensive wine list at the Witchery is also famous across the globe. From old
world classics from Bordeaux to new world Chilean wine, there is certainly a perfect
accompaniment for any meal at the Witchery. The restaurant also boasts an extensive range of
Malt Whiskies, liqueurs and coffees.

The Witchery began with just three staff although today over 200 work at a collection of venues,
turning over daily the first years proceeds. Accommodation is also now available in the form of
eight suites that have been inhabited by Hollywood stars Jack Nicholson, Michael Douglas and
Catherine Zeta-Jones.
